You will need
  1. 1 tsp CTC tea (such as the Assam Spring CTC)
  2. ¾ cup water
  3. ½ cup full cream milk
  4. Sugar
For the Masala
  1. 2 cardamom pods
  2. 1/4 inch ginger
  3. ½ inch cinnamon
Instructions
  1. Put water to boil and just as it starts to bubble, toss in the tea leaves.
  2. Let the leaves play around for about 2 minutes.
  3. Toss in spices, if desired. Let the infusion simmer for an additional minute thereafter.
  4. Add milk and allow the chai to simmer for 2 to 5 minutes.
  5. Toss in sugar as per your liking.
  6. Simmer for about another 2 minutes. Let the chai come to a boil again, and once again after that, till it beings to look toffee-colored.
  7. Turn off the heat, strain chai into a mug and enjoy!

  1. I love all the ingredients you have used here Saloni Samant. I just know of teas infused with ginger alone or with lemongrass by itself. This sure looks fragrant and refreshing.

      Hi Sylvia, The thing about the Indian masala chai is that there’s no single recipe for it.
