“Eager” doesn’t come close to describing how I feel about the arrival of the mango season. It borders more on “impatient” As summer progresses and the first mangoes begin to make an appearance, I am already making plans for them. With an early summer hitting us this year, I have been dreaming of this mojito since March. With the heat pounding down, these Mango Green Tea Mojitos are guaranteed to keep you cool.
I’d understand if you were a strict teetotaler, but if you enjoy even an occasional drink, these mojitos are a must try! The combination of fresh green tea and sweet mango juice with white rum is quite irresistible when you are seeking some respite from the heavy summer heat. There is nothing like holding a chilled glass of mojito and snacking on a Goats Cheese and Arugula Crostini on a lazy evening with friends.
I don’t claim to be a cocktail expert so you are free to make your adjustments. This mojito recipe is simple, and does the job!
Ingredients:
1 tablespoon freshly squeezed Lime Juice
1/4 cup loosely packed Mint Leaves
1 teaspoon Brown Sugar
1/4 cup brewed Green Tea, chilled
1/2 cup Mango Juice
45 ml White Rum
Muddle together lime juice, mint and brown sugar in a Collins glass (mojito glass). Add a few cubes of ice and top with green tea, mango juice and white rum.
